i would recommend an engine cover, also try to make the fuel tank somewhere near the back of your seat for safety and try to prepare a round bar to secure the fuel tank from being hit from the back, after you install it someplace behind the seat. Plus it will look much better, as the fuel tank is looking very awkward at the moment
I believe if you can prepare some sort of small steel pads to be used on the round ending of the acceleration and braking pedal, it will give you much more easiness while using them. and will save you from slipping your foot off of it.
As a member just mentioned that you should please prepare an over the waist tightening belt to be used at seat belt, for better driving experience and security
and i do think you would be looking for installing a proper bucket seat in the 2nd or 3rd phase
